Ozone is one of the most powerful oxidants available for potable water disinfection and has been used in this role since the late 1890s. It has been the disinfectant of choice in the majority of European and Canadian water plants since the 1940's, due to its oxidation properties, lack of residual, and its taste and odor control abilities when properly applied.
Recent changes in legislature and industry guidelines have increased the need for ozone in the beverage industry in general. In bottled water plants, ozone can be used to disinfect product water to comply with International Bottled Water Association (IBWA) guidelines while leaving no residual taste or odor.
At beverage plants, ozone can reduce or eliminate the need for chemical or high temperature disinfection processes, reducing downtime and chemical costs.

The US Food and Drug Administration (FDA) regulates bottled water as a packaged food product. By law, the FDA standards for bottled water must be as rigid as the US Environmental Protection Agency (EPA) standards for public drinking water. Working alongside regulatory agencies, the International Bottled Water Association (IBWA) sets industry standards through a model code.
In November 1982, the FDA granted ozone disinfection for bottled water a Generally Recognized as Safe (GRAS) classification for a residual dissolved concentration of 0.4 mg/L. The FDA also recognized ozone treatment as a Good Manufacturing Practice (GMP) within the bottled water industry.
The minimum ozone treatment for GMP is 0.1 parts per million (ppm) or 0.1 mg/L in an enclosed system for five minutes, as per Chapter 21 of the Code of Federal Regulations (CFR), Section 129.80 d4.
EPA and OSHA standards allow workers to be exposed to a weighted average of 0.1 ppm ozone over eight hours, or 0.3 ppm for 15 minutes. Over 10 ppm is considered an immediate danger to life. Ozone has a very pungent odor, and, if detected, workers should immediately vacate the area to avoid overexposure.
